Spicy Vodka Pasta
The most delicious comfort meal on a cold night!
Ingredients:
1 medium yellow onion, diced
3 garlic cloves, sliced
2-3 Tbsp olive oil
1 tube tomato paste
3 Tablespoons Calabrian chili peppers (less for less spice) (or red pepper flakes if you don’t have)
1/2 cup Vodka
3/4 cup heavy cream
1/2 cup freshly grated parm
2 Tbsp butter
1 lb pasta
Basil for garnish
Directions:
Boil large pot of water for pasta. While it heats, begin the sauce.
Add onion and salt to a large pan on medium heat with olive oil. Let cook for 3-5 minutes until translucent and then add the garlic. Let cook until fragrant, 2-3 minutes.
Add tomato paste and let cook down for 5 minutes, stirring constantly with a spatula or wooden spoon
Add vodka, let it deglaze the pan before adding the heavy cream.
Let the sauce simmer on very low, even off the heat.
Salt your pasta water, and add pasta. Cook for 2-3 minutes less than the package says.
Once pasta is ready, add directly to the sauce (if you removed from heat, place it back on low).
Add the pasta to the sauce, adding pasta water, about 1 cup, to make sauce even more creamy. Add in the parm and butter and mix it all together.
Let the pasta and sauce simmer for 3-5 minutes.
Add basil and enjoy!
